Hey Jason’s Deli Family!
If you love our Lobster Chowder, you’re bound to love this recipe. Caution: DO try this at home!
Ingredients
1 T Olive Oil
2 T Butter
2 Medium Shallots - Chopped
1 Clove Garlic - Chopped
1.5 Cups Arborio Rice (or other short grain variety)
3 Cups Seafood Stock
1 Bowl Jason’s Deli Lobster Chowder (12 oz)
1/4 Cup Parmesan Cheese
2 T Mascarpone Cheese
1 T Lemon Juice
1 T Scallion Chopped
Salt and Pepper to Taste
Directions

In a tall medium saucepan bring olive oil and 1 T butter to medium heat

Once melted, add shallots and lightly sauté until translucent but not yet brown (about 3 minutes)

Add rice and stir to fully coat in oil and cook for about 1 minute to give slightly toasted flavor

Add garlic and sauté 1 more minute

Add just enough stock to cover rice and cook on medium heat until almost completely absorbed

Repeat process, stirring frequently until all stock has been incorporated; this could take up to 20-25 minutes

Once final bit of stock has been completely absorbed, add lobster chowder and continue to stir until it has mixed well with rice

Fold in mascarpone, 1 T butter, lemon juice, and Parmesan

Season with salt and pepper to taste

Garnish with fresh grated Parmesan and scallions

Serve hot
