Ranchero Wrap Casserole

1 whole rotisserie chicken pulled (yields about 1 pound)
1 cup ranch dressing
½ cup heavy cream
½ cup evaporated milk
1 cup diced pickled jalapeño
1 cup pico de gallo
1 yellow onion diced and sauteed (@ 5 min, med heat, 1 Tbsp Olive Oil)
1 tbsp chili powder
1 tsp paprika
4 cups cheddar cheese
5 tortillas
1 avocado chopped
Jalapeño Ranch Dressing for garnish


  1. Preheat oven to 350° F.

  2. Pull chicken apart and set aside.

  3. In large bowl, mix ranch dressing, heavy cream, evaporated milk, pickled jalapeño, pico de gallo, yellow onion, chili powder and paprika.

  4. Add chicken to mixture and stir.

  5. In a baking dish, layer 2 tortillas, ½ the chicken mixture and 2 cups cheddar cheese.

  6. Repeat layers.

  7. Bake covered for 25 minutes.

  8. Cut 1 tortilla into strips and fry.

  9. Remove lid and bake an additional 5 minutes.

  10. Garnish with fried tortilla strips, avocado and jalapeño ranch.

  11. Serve and enjoy!
